Granola Bars

 

    Ingredients:

4 tablespoons melted butter
1/2 cup honey
1 teaspoon vanilla
2 eggs lightly beaten
1/4 teaspoon salt
1/2 cup whole wheat flour
2 teaspoons cinnamon
2 teaspoons baking powder
4 cups quick oats
1 cup raisins
1 greased baking pan 9" x 13"
2 bowls

Tip: Before measuring honey, spray measuring cup with cooking spray.

    Directions:
 
1. Preheat oven to 350 degrees.
 
2. In one bowl mix 4 tablespoons melted butter, 1/2 cup honey, 1 teaspoon vanilla, and 2 eggs.
 
3. In second bowl mix 1/4 teaspoon salt, 1/2 cup whole wheat flour, 2 teaspoons cinnamon, 2 teaspoon baking powder, and 4 cups quick oats.
 
4. Gradually add the dry ingredients to the wet ingredients and mix well.
 
5. Mix in one cup raisins.
 
6. Spread mixture into greased 9" x 13" pan.
 
7. Press the batter down so that it will spread evenly.
 
8. Bake for 15 minutes or until the top is a nice golden brown.
 
9. Let cool and slice into bars.
